Bourbon because not everybody can handle it and it’s an acquired taste

Born and raised in the Cayman Islands

What 3 things would you bring to a deserted island?
Bourbon, water and video games

What brought you to Cayman?
A relationship with an absolutely lovely woman

If you had to be any type of alcohol, which would it be?
My grandmother would say rum, I would say Amaro 

Hangover Cure?
Glass of milk, a Nature Valley bar and a nap

One of your favorite things about bartending?
Coming up with dope names! You should be able to read the name of the drink in one swoop and know what it's about

What are some things you like about Cayman?
Hailing from New Orleans, I actually find there to find quite a few similarities! People embracing the cocktail scene, both tourists and locals. A place where people genuinely enjoy their time off, enjoy themselves and look forward to cocktail/mocktail or two.

What's your Hangover Cure?
A massive bottle of water with a Berocca and a side of bacon and eggs.

What’s your signature cocktail ?
It's usually a classic of some kind, I'm a huge fan of Negronis - but I'd say an Old Fashioned is my go-to. An old classic can't be broken!

If you were a certain type of alcohol what would you be and why?
I'd be a peated Scotch. Something really smoky - like the smell of your Grandfather's couch. I'd be an old leathery couch.

A penguin walks through the door wearing a sombrero right now - what does he say and why is he here?
He says can I have a tequila on my bill.

What drink from the past would you love to see becoming popular again?
Everything nowadays is coming back!

What's your Hangover Cure?
Drink some more.

What’s your bar tending philosophy?
Every since joining the Brasserie team, I've adopted a garden-to-bar philosophy. Every cocktail we make has something from the garden, juice bar or smokehouse.

Is there a drink from the past that you wish was made popular again?
Regular daiquiris. They're always served frozen now!

If you were any kind of alcohol what would you be and why?
Rye. It's a little more bitter than your regular bourbon. And why? Because I'm always sour!

You've been dropped on a deserted Island. What 3 things would you bring with you?
A bottle of Zacapa 23 and two more drinks to mix with!

What's your Hangover Cure?
Take it easy the night before because nothing really works! A Swedish friend once told me boiled potatoes, but I really think it depends on what you've had to eat the night before.

If you were an alcohol what would you be and why?
A tequila because I'm a fun person!

What is the funniest thing that has happened to you on the job?
Every day is a funny story here.

How long have you been bar tending?
I've been in the industry for 19 years.

What 3 things would you bring to a deserted island?
Bottle of tequila, soccer ball and a radio to listen to some music.

A Caesar. Hair of the dog!

What’s your signature cocktail ?
Anything to do with whiskey.  

What drink from the past would you like to be made popular again?
I'd like to see people backing Chartreuse and Campari again.

Tell us a funny story from the job.
When I was working in a nightclub, it was a bank holiday weekend and everyone was wasted. I had this man who when it came time to make his payment, pulled his phone out and started taking it apart. I thought maybe he had his card held in one of those pocket things that attach to your phone - but no, he eventually handed me his phone battery for payment!
