What's your Hangover Cure?
When suffering from a hangover my usual routine would be a pint of ice cold water followed by a swim in the pool and then a bacon sandwich. Just don't try doing all that at the same time


What’s your signature cocktail ?

I don't really have a signature cocktail as such, my taste changes regularly so I never really settle on one thing. However I do always try to use fresh locally sourced ingredients and keeping it seasonal is essential.


What brought you to Cayman and what made you stay longer than you had intended?

I was originally planning to travel to Australia when a friend contacted me about a position in a bar he was opening, I quite literally Googled ‘Grand Cayman’ to see where it was and then booked a flight. Six weeks later and I was here!


Funniest Bartending Experience?

Sending young new employee's on bogus errands to other nearby bars or restaurants is always a quick way to break the ice while having a laugh at somebody else’s expense. Usually it’s a wild goose chase looking for something like a long stand or Ice making fluid, Champagne bubbles or even a left handed bottle opener.


Have you every spotted a celebrity at your bar?

I have come across many celebrities during my time working in bars. The first night I arrived in Cayman I went to visit the bar that I was going to work at, and the first thing I saw was Lil Wayne drinking from a bottle of tequila.

What's your Hangover Cure?
My favorite hangover cure is the ocean - nothing wakes you up more than a good morning dip. (Then maybe a cheeky Ceasar)


What’s your signature cocktail ?

My signature cocktail has to be my first creation at Anchor and Den which was the London Green and Tonic still an iconic cocktail at our bar. Lots of English cucumber and mint mixed with some fresh lime and shaken up with Tanqueray, perfectly balanced refreshing beach house cocktail.


What brought you to Cayman and what made you stay longer than you had intended?

The warm Caribbean weather was a big factor in my move to the Cayman Islands, but I fell in love with the culture, the people and the lifestyle of this incredible island, so after a few months of being here I haven't looked back.


Funniest Bartending Experience

Funniest experience in bartending, well I've have many and a lot when I was bartending in Fidels Murphys when I first arrived on island... World Cup 2014 lots of Guinness and lots of laughs!

What's your Hangover Cure?
Favourite hungover cure is definitely a spicy Bloody Mary, that's what fixes me up after a heavy drinking sessions..... All topped with a side of pizza of course..


What’s your signature cocktail ?

My signature cocktail has to be the Hemingway daiquiri, a great mix of lime, maraschino, grapefruit and obviously Cuban rum. Also piña colada is a great classic, made only with fresh fruit.


What brought you to Cayman and what made you stay longer than you had intended?

Well I decided on the Cayman Islands as I wanted a pet iguana. Just kidding, I wanted a bit of sun and I fell in love with this corner of paradise. Now I can truly be a #BeachBumBartender.

Funniest Bartending Experience

Too many, some too crazy to mention, but one of the most recent was my last birthday: my team got me a sword to saber champagne, so with me obviously been a "pro" I decided to pop a NLT of vintage 2003 Dom Perignon in front of a everyone in the bar while everyone was singing happy birthday (Saturday night the bar was packed 3 rows deep with guests), you guess what happen... Bottle smashed in my hand and everyone stop singing. 100 people looking me shocked. There is a video on social media.

Nothing beats a bad hangover like a "Special" Coffee with a greasy breakfast!

Deckers Southside:
Muddled Cucumber and mint leaves
1oz Simple Syrup
1oz Fresh Lime Juice
2oz Tanqueray Gin
Topped with Club Soda
Garnished with a cucumber and mint sprig

What brought you to Cayman and what made you stay longer than you had intended?

My mom is from Cayman so I have actually spent the majority of my life on the island. I have left a few times but every time I came back I appreciated and love it that much more. This is home for me.

Yeah I've had a few pass through over the years...

What's your Hangover Cure?
My favorite hangover cure is the “Mystery Wake-Up“ That is 2 double espresso, vodka and kaluha, on the rocks. A definite wake up!


What’s your signature cocktail ?

It’s the signature cocktail at Morgan’s: the Espresso Martini.


What brought you to Cayman and what made you stay longer than you had intended?

A good friend of mine brought me to the Cayman and I fell in love with the Caribbean lifestyle immediately. The quality of life working at a great company surrounded by the ocean, the sun and the beach made me stay for three years now. “the life is beautiful“

Funniest Bartending Experience

One day a guest walked into my bar and said that he was not used to drinking alcohol, but desperately needed a strong drink to forget about his bad day. He suggested he could pay ahead as he could not guarantee what would happen afterwards. He ordered and paid for a Long Island Ice Tea, which he finished in less than 5 minutes, and as a result a colleague of mine had to drive him home. He definitely forgot about his bad day!

What's your Hangover Cure?
Soda water and Angostura bitters is the perfect cocktail to take away any hangover.


What’s your signature cocktail ?

Mojitos specials – I make over 20 fresh versions!


What brought you to Cayman and what made you stay longer than you had intended?

Because it is paradise and feels like my home town in Cuba.

I prepared a cocktail for a lady at the bar, and after she took her first sip, she asked me to marry her! Lol!

Have you ever spotted a celebrity at your bar?
Yes, I have met a few famous basketball and baseball players, but my favourite was the Manchester United owner. He was drinking Havana Club Maximo at CI$375 a shot and he wanted me to mix it with coke and lime! He ended up buying the whole bottle!
